Owing to the successes obtained with kitchen of Madam Annunziata, who was the founder and chef of Pensione Aurora, her daughter Gianna Gradassi and the son Andrea Scotacci decided to open the restaurant to a huger clientele.

That's for this reason that, Apollinare Restaurant was born in 1991 (below to Hotel Aurora) on the rests of an ancient Franciscan convent of the XII cent. and closed to Piazza della Libertà, in the historical centre of Spoleto.

Its atmosphere is elegant, intimate and pleasant; the kitchen joins the tastes of the most genuine regional tradition to the creative dishes introduced by the chefs with big care; an excellent wines' list and an impeccable service help moreover the success of the Restaurant Apollinare, who is mentioned, in fact, in the most important Italian and International gastronomic guides.

During the summer season, you can live the same atmosphere of the inside , in the delicious bloomed gazebo, where you will have the occasion to meet great personages and listen to the music that sometimes arrives from the near Teatro Romano.
